KETO CHICKEN STRIPS

Ingredients:

1/2 cup almond flour

1/2 cup parmesan cheese

Herbs and spices (paprika, parsely, garlic, salt, onion powder, basil)

3 or 4 eggs

2 Tablespoons butter

Method:

Mix the eggs in a bowl

In a separate bowl, mix all the dry ingredients

Coat the chicken strips in the egg, transfer to the bowl with dry ingredients, and coat all the sides of the chicken strip

Place coated chicken strips into a baking pan

Melt butter, pour over the chicken strips

Bake in the oven for 30 minutes at 180 degrees C.

MAYONNAISE

Ingredients:

2 egg yolks

1 teaspoon mustard

3 teaspoons lemon juice

½ cup olive oil

½ coconut oil (solid oil must be in liquid form – warmed in sun)

Method:

Put the yolks, mustard and 1 teaspoon of lemon juice into a blender and mix well

Whisk vigorously while dripping the oil in drop by drop

As you add more oil, an emulsion will form, the mayonnaise will start to thicken and oil can be added faster at this point

When all oil is weLL mixed and the mayonnaise is thick, add rest of the lemon juice and taste. Add salt and pepper.

PUMPKIN SEED POPCORN

Method:

Place a single layer of pumpkin seeds onto an unheated, ungreased pan and cover with a lid

Apply heat and allow seeds to pop. Shake the pan now and then to prevent seeds from burning.

Also add a few sunflower seeds for extra protein. (optional)

The process takes only a few minutes

Season with Himalayan/pink salt.

SIMPLE COCONUT OIL CHOCOLATE

Ingredients:

1/2 cup coconut oil

1/4 cup cocoa powder

2 tablespoons raw hoeny or stewia, adjust according to taste

1 teaspoon vanilla extract

Method:

Melt the coconut oil and add the honey

Whisk and add the cocoa powder

Whisk occasionally while pouring into silicone ice cube tray or mini muffin tray. Makes 12

Cool for 30 minute in the fridge or freezer. May ake about 15 minutes to set.

Optional:

1 teaspoon orange rind (mix into the chocolate)

nuts (sprinkle into the silicone tray)

1/4 cp dried coconut (mix into the chocolate)
